Broiled Sweet and Tangy Tilapia

Tonight I tried a new recipe because I had some tilapia that I wanted to use. It was called "Broiled Sweet and Tangy Tilapia". Although the sauce smelled wonderful, because the fish wasn't marinated in the sauce the dish was very blaw. I think that if you were to marinate the fish for a couple of hours in the marinade it would be wonderful. I've posted the recipe the way it was originally written (except that I used olive oil instead of butter). If anyone gives this a try with the marinating let me know how it turns out.

1 tbsp olive oil
6 tbsp lemon juice, divided
2 tbsp olive oil
2 tsp grainy Dijon mustard
2 tsp raspberry vinegar
4 tsp honey
1/2 tsp tarragon
1lb tilapia fillets

Preheat oven broiler. Place a sheet of aluminum foil on your broiling pan (or on a cookie sheet) and brush with 1 tbsp olive oil.

In a bowl, whisk together 2 tsp lemon juice, 2 tbsp olive oil, Dijon, raspberry vinegar, honey and tarragon.

Place tilapia on prepared baking sheet. Broil 3 minutes in the preheated oven. Turn tilapia and drizzle with approximately half of the marinade. Continue broiling for 3 more minutes; turn and drizzle with remaining marinade. Return fish to oven and broil for an additional 2 minutes or until fish flakes easily with a fork. Remove from heat and sprinkle with remaining lemon juice.
